I love the refreshing crisp taste of a cucumber. I had these cucumbers lying around in the refrigerator, and I became inspired to make something different. So, I decided to combine the caramelized onions, scallions, and cream cheese together to make a fun filling for the cucumbers, and I was happy to end up with a simple but elegant appetizer.
Ingredients
- 1 cucumber
- About 4 tablespoons caramelized onion/scallions
- Olive oil for sautéing
- 4 tablespoons of cream cheese
Instructions
- To prepare the caramelized onions: In a large pan, heat a few of tablespoons of olive oil over medium heat. Add the onion slices and sauté for about 30 minutes over moderate heat or until caramelized and brown.
- In the meantime, prepare the cucumber slices: Cut the cucumber crosswise about 1 – 1.5 inches in length. Scoop out the center of each of the cucumber pieces to make a hole. (I used a knife and cutting board for this and carved the centers.) Make sure your cucumber pieces are big enough to leave a indented hole big enough to fill.
- To prepare the filling: Combine 4 tablespoons of caramelized onions and scallions with the cream cheese in a bowl. Start with just a little until you have the right onion to cream cheese ratio you prefer. Season with garlic powder and salt for taste (optional.)
- Spoon the filling into the cucumber holes , and garnish with scallion pieces. These are best chilled before serving.
Notes:
I large cucumber will make 8 cups. This will make much more than you will need using one cucumber so feel free to adjust the rest of the filling ingredients accordingly. Alternatively, it would be great as a dip served with other veggies.
